Tex Mex Mac & Cheese April 17, 2011

Hi, kids.  Just dropping by to share a delicious twist on your standard macaroni and cheese.  This recipe was very easy and versatile since you could add any number of mexican-inspired ingredients.

Tex-Mex Mac & Cheese
Slightly adapted from recipe >>>HERE<<<

  • I used more than 1 cup dry pasta, probably about 1 1/2 – 2 cups
  • I added a chunk of butter and started with a traditional roux rather than just adding the milk right to the dry flour 
  • I used way more cheese (regular sharp cheddar) than 1/2 cup 😉

This stuff was really good… kind of like tacos meets mac & cheese.  I really liked the texture and heartiness provided by the black beans, and I would highly recommend the salsa on top for some spice.

So I didn’t take pics of my whole day of eats today.  My food was totally boring, and lunch was just leftovers.  I’ll share tonight’s dinner tomorrow, though.  For today, I’ll show you what we had last night… another Mexican mish-mash!

Creamy Burrito Casserole

I made some minor adjustments, such as using way less cheese, less tortillas, and adding salsa and jalapenos.  This stuff was pretty good, it tasted just like a burrito.  It was a little bit bean-heavy, though, so I would use maybe just half of a can next time.

I’m just going to show you what I’ve been eating.. again. 

Fried rice (Sauteed onions and carrots, cooked day-old brown rice, frozen peas, 2 whole eggs, seasonings, soy sauce, teryaki sauce).

Turkey enchiladas… can you tell I’m really into sour cream lately? 

Pita pizza with roasted asparagus.

I call last night’s dinner slop because there’s no way to get a decent, appetizing picture of it.  This was one of those dinners you just throw together from things already in your fridge, so there’s not really a recipe.  Honestly, these are my favorite kind of dinners to make!

Mexican Lasagna

  1. Saute some ground turkey (about 1/2 pound) with some chopped onions, black beans (about 1/2 can), and seasonings.  Stir in some salsa.
  2. Grease a small, glass baking dish, then spread some salsa on the bottom of the pan.  Place 2 small, whole wheat tortillas on top of the salsa.  Spoon some of the meat mixture on top of the tortillas, then top with some shredded cheddar.  Repeat this 2 more times.
  3. Bake at 350 for about 15 minutes or until heated through and cheese is bubbly.
  4. Top with salsa and sour cream.

Good evening, lovers!  I have a winner of a dinner for you.  I’ve had this recipe saved forever and finally decided to make it this week.  These enchiladas were SOOO good!  If you love traditional enchiladas, I definitely recommend trying these for a little something different.

Chicken and White Bean Enchiladas with Creamy Salsa Verde
I pretty much followed the recipe exactly.  I used sharp cheddar cheese on top and had some sauce leftover, however, I realized I forgot to put some on the bottom of the pan before putting the enchiladas in.

Happy Saturday, people!  At this time in one week, my baby sister will be married!  Wayne, Ziggy, and I will be making the 10-12 hour drive back to MI for the festivities on Thursday morning.  I’ve been trying to work on the dreaded maid matron of honor speech/toast, but son had other ideas…

He doesn’t think a toast is necessary 🙂

Ok, so onto the little bit of food I have for you today.  I made this concoction a couple nights ago. 

Southwestern Chicken Corn Pudding

Not sure why this is called “pudding,” but it was pretty good.  It was a teeny bit on the bland side, so I would recommend adding some more seasonings to the egg/flour mixture (maybe some garlic powder or cayenne pepper), and adding some salsa or hot sauce to the chicken/corn mixture.  Topping it with salsa and sour cream is essential in my opinion.  Now I’m off to make tacos and continue preparing for our trip!  Tata for now!
