I don’t know why I hesitate to write posts that only contain my random eats and no recipes.  After all, some of my favorite blogs are food diary / random style.  *Shrugs*  Oh well, I guess if you’re looking for a recipe tonight, you’re SOL! 

Dinner last night:  Giant clean-out-the-fridge salad with baked salmon, tomatoes, bread & butter pickles, banana peppers, green onions, mozzarella cheese, Annie’s Light Honey Mustard Vinaigrette, and Tribe Forty Spices Hummus.  Holy yummmmmmm.

I had a kind of shitty day at work today.  Ugh, just in a shitty mood overall, I guess.  *Sigh*  Wayne is working late (big surprise), but at least he isn’t bringing his laptop (aka WORK) home tonight, so maybe we can talk to each other for more than 5 minutes.  Anyway, I had a ridiculously strong craving for eggs and toast, and since I wasn’t gonna wait around for Wayne and make a “real dinner,” I decided to just make the most random meal ever.  I can’t even tell you how good this was.  As my mommmmy would say, it really hit the spot.   

2 over-mediumish eggs with Frank's on top of dry toast, alongside steamed sweet potato with best dippers ever (hummus and BBQ), all topped with a sprinkle of green onions. How's that for a long-ass description??

Before this glorious dinner, I stopped off at Rite-Aid to get a couple little pick-me-ups.  Yeah, it’s pretty pathetic I get my retail therapy at freaking Rite-Aid, huh?

No recipes tonight, folks.  Only my eats, which I hope don’t bore you to death.

Shades of orange goodness

Dinner was fantastic:  MorningStar Tomato Basil Pizza burger, roasted carrots, red onion, and sweet tater with hummus and BBQ for dippage.  I looove dinners like this because of all the yummy bite combinations that can be created. 

The perfect bite has a tater, piece of burger, hummus and BBQ.

As delicious as this meal was, I was hungry like 2 hours later.  I’ve seen oats-made-savory allll over blogland and have been meaning to try it.  This bowl of heaven that I saw over on Graze With Me finally gave me the push I needed to whip some up!

In the bowl:  1/4 cup oats made with water and microwaved with 1 Tbsp cheddar cheese and Frank’s, then topped with over-easy egg and more Frank’s.  WOWWWW, sooo good!  Loved the runny yolk all mixed in.  I’m definitely seeing a lot of these little creations in my future.

Hello dears.  We are back in MI, back to the daily grind… for only another month, that is.  The rest of our time in MI is going to be ridiculously busy/emotional/cold/snowy etc etc etc.  Anyway, this week’s meals focus on using up what’s in the fridge, freezer and pantry. 

Every now and then, I come across a new recipe that looks really good.  Then I make it, and it’s completely outstanding and blows me away!  This is one of those recipes.  I found it on this awesome blog while reading my pre-engaged friend’s awesome blog (Hi Ash! :-))  Gina’s blog is so great because all her “skinny” recipes come along with the calorie info!  LOVE.  Aaaand the pictures are absolutely amazing.  I’ve saved many more of Gina’s recipes for future use, and if they’re even half as good as these meatballs, I will be fully satisfied!!

I followed the recipe exactly.  I managed to get 13 delicious 2-ounce meatballs out of this.  I can’t stress enough how flavorful these were.  Cilantro, sesame oil, soy sauce, lime… yes, please!!  And the sauce could be drinkable…  Ok, I’ll shut up now.  I’m not in the mood to type the recipe all out, so hit up Gina’s page for the goods!

Our “trip” is coming to an end.  We leave tomorrow afternoon.  Not gonna lie, I’m ready to go back HOME…. to MI!  This will be a quickie post.  Yesterday, we took our hotel’s free shuttle here…

It was quite the place.  We couldn’t buy anything, so we just walked around…

shared an awesome smoothie made of frozen yogurt, bananas, coconut, protein powder, pineapple (?), and other stuff…

and had some food and draaaank at Bubba Gump’s Shrimp Co.

MN day 3-4 February 18, 2010

Hello lovelies.  Today is day 4 and it’s still full sun outside.  It’s crazy the difference it makes.  We signed a lease yesterday and opened a new bank account.  Wayne has already called 3 different insurance companies for quotes.  All in all, we are pretty much done with everything we needed to get done.  I actually took quite a few food pics yesterday.  I’m not sure if people think it’s boring/stupid to do this… Wayne doesn’t “get it” and now I am wondering if I should even bother!  Anyway…. I give you MN day 3, in pictures!

My buffalo chicken salad was... eh. Iceberg lettuce sucks, and the ranch wasn't "lite" like the waitress said, it was fat-free. Barf.

After dinner last night, we went to a movie with smuggled candy and water on hand.  This morning, I awoke to see Step by Step on TV!  Imagine the flashback!  I never realized how ugly and blue their kitchen was and how cheesy and “Full House”esque this show was!   


So, we don’t have any real plans for today and tomorrow.  We might venture onto the “transit system” and visit the Mall of America, but we can’t buy anything, so I’m not sure if we will!  Alright loves, time to shower and get around for the day.  Toodles for now.


MN day 2 February 16, 2010

Well, today is day 2 of our MN trip, but I feel like we’ve been here much longer!  MN is an hour behind us, so it feels like time is going sooo slow.  We were passed out by 9PM last night!  We originally planned on touring 2 townhomes a day, but we’ve managed to see most of the “favorites” already.  We have pretty much made up our minds on the one we want, but we have to decide for sure if we really want to fork out the money (it’s just a tad more expensive here than in Smalltown, MI….!).  Anyway, our hotel is AWESOME.  Our room is like a mini apartment and has the cutest little kitchenette…

We got a few groceries yesterday so we wouldn’t have to eat out every meal.  Last night’s dinner was good old PB&J!

Made with evil stuff pictured below…!  In attempt to justify this, we didn’t want to buy a whole jar of PB and a whole jar of jelly, knowing we wouldn’t be able to take it with us at the end of the week!  (Not to mention it’s freaking delicious!!)

I also found the ever-popular-on-blogs PopChips and had to try them… yeah, I may have consumed the whole bag in one sitting…

It’s really cold here, but it’s been sunny so far which makes the cold MUCH more tolerable. 

Breakfast today was of the continental variety… sorry no pics, but it was pretty good!  They even had hot stuff like eggs, sausage and waffles.  After some more townhouse tours, lunch was had in the hotel room… sunny soup and sammie (turkey this time!).

Dinner tonight was at B-dubs (Buffalo Wild Wings).  Again, no pics because I’m chicken about taking food pics in public :-p  I had a Bud Light and honey BBQ chicken salad.  It was deeeelicious.  Then, we went to our first ever Super Target!  It sort of creeped me out seeing groceries at Target!  We got some fresh fruit and other goodies.  Love.

That’s all for today folks!  I’m loving that we have WiFi, Wayne’s computer, a sweet hotel room, and most importantly, the GARMIN!!!!!  This trip seriously would not be possible without it!!  Toodles for now lovelies.


Farewell! February 14, 2010

I am currently at my mom’s on the eve of our week-long trip to MN.  We will be gone Monday thru Saturday looking for a place to live and exploring the area.  I do not feel prepared for this whatsoever, and I know that it will be “real” after this trip.  Aaaanyway… I leave you with my boring eats for the day (most of them!).  I’m not sure if I’ll be able to blog during the week, but if we have internet at our hotel, I’ll try to get in a couple posts!  

Breakfast was eggs scrambled with potatoes, green onions, mushrooms, Frank’s, and mozz cheese; turkey bacon and toast.  Oh and a little V-day card from my mommy!  Wayne and I are boycotting V-day this year.

My half-eaten lunch (forgot to take a pic till I was almost done):  Mom’s Cowboy soup (beef, veggies, salsa etc), grilled turkey sandwich, bluberry Chobani with Kashi Go-Lean.  Looove me some soup and sammie!

Over the course of the day, I’ve had one too many of “Wayne’s V-day gift” chocolates from my mom.  Yeahhhh, and a few Lindt’s truffles too!  Oooooops.

Dinner was a ginooormous taco salad with taco Doritoes, mmmm!  This was all Wayne’s idea, and it sure was a good one!  Hehe.  I didn’t manage to capture everything I ate today, and I plan to have a little snackie snack later.
