Hello Lovelies. My weekend consisted of movie watching, eating at Panchero’s and Bennigan’s (<— I never know how to spell that), unsuccessfully shopping for a new winter coat to keep me warm in the arctic tunda known as MN, searching for places to live in said tundra, and re-spiffing up the house / laundry-ing / cooking / grocery-getting. I did manage to take a couple food pics for your entertainment, since I’ve been lacking in the recipe department lately. So here goes the randomness.
Breakfast of champions for both Sat and Sun: 1/4 cup oats, 1/2 cup organic skim milk, Splenda, flax meal, Naturally More PB, sprinkle of granola, fresh pear. There really is a bunch of oatmeal under all those pears!
And here is a horribly unappetizing picture of Saturday’s dinner. This dog-food-esque meal consists of diced potatoes, carrots, and onions sauteed with Italian turkey sausage that I removed from the casings. One pan, one bowl, done. To quote Wayne “Not bad for a cobblejob!”
Sunday’s lunch, bathed in rarely-seen sunlight… salad with leftover Italian turkey sausage, alfalfa sprouts, cheddar, cucumbers, and Annie’s Light Honey Mustard Vinaigrette. Very tasty.
Sunday’s dinner… eggplant parmesan and whole wheat spaghetti. I’ve made this before, and you can find the “recipe” in my blog if you just search “eggplant.” Yeah, I’m too lazy to link to it. This was pretty good, and Wayne really liked it the last time I made it. However, tonight he wasn’t a big fan. Whateverrrr!
SON had a fantastic weekend watching the birds.
