Tonight’s dinner looked very similar to THIS DINNER I made awhile back.  Click in that post for the recipe to the orzo.  Tonight, I just used water because I had no chicken stock.  As for the salmon, it was inspired by Erin, RD’s salmon.  I sort of just made my own version based on the ingredients she listed.  In her words… “Holy crap, that was good!”   

Honey Dijon Salmon
*as with all WannaBe Chef created “recipes,” measurements are approximate!

Mix in a small bowl:
1 Tbsp soft butter
1 Tbsp grainy mustard (such as my new favorite stone ground Plochman’s mustard
1-2 tsp honey

Spread mixture over 4 salmon fillets
Top each piece with 1 Tbsp or so of bread crumbs and a sprinkle of dried dill or parsley
Drizzle with a tad of olive oil to help with the browning
Bake at 400 until flaky and cooked through (15 minutes or so)
Put under the broiler for the last couple minutes to brown the top, if desired 

*I recommend putting a rack in your baking pan so the salmon doesn’t sit in all its juices and cooks faster
