That’s how fast tonight’s meal came together.  I didn’t follow a recipe, so I’ll just tell you what I threw together…

Fried Rice
You’ll need:
Cooked brown rice – I believe I made 4 servings according to the box directions.  It works better if you cook the rice ahead of time and let it chill overnight, that way it doesn’t stick and become a big mass of goo.
Veggies – I used carrots, green onions, and bean sprouts
Garlic – 1 or 2 cloves, minced
Soy sauce
Olive oil
Sesame oil
Sesame seeds
– about 1 Tbsp or so
Eggs – I used 3 whole eggs

Sautee the veggies in some olive oil and sesame oil until slightly softened, add the sesame seeds and cook for another minute or so.  Add the rice and a bunch of soy sauce to taste, heat through.  Make a well in the middle of the rice and spray with cooking spray.  Pour the eggs in the well and scramble until they start to cook.  Then mix it all together and cook until everything is hot and the eggs are cooked.  Add more soy sauce if needed.  Serve! 

So yummy, and the possibilities are endless… I served ours with pre-made chicken egg rolls and sweet ‘n sour sauce.  The whole meal was done in less than 15 minutes.

More cilantro for me, please.
