I’ve made this soup soooo many times, and it’s always a hit.  It’s easy to keep the ingredients on hand and comes together really quickly.  And it tastes really good the next day, if not better.  The recipe comes from my Texas-born uncle Ron. 

Taco Soup
Sautee together in large soup pot:
2 lb ground beef (I use just 1 lb of lean ground beef or turkey, it’s plenty in my opinion)
     1 large onion, chopped
     1 green pepper, chopped
Stir in:
     1 envelope taco seasoning
     1 envelope Ranch dip seasoning
Add in (do not drain):
2 cans stewed tomatoes
     1 can Rotel tomatoes
     1 can pinto beans
     2 cans hominy (1 white and 1 yellow)
Bring to a boil and simmer for 30 minutes
Serve with crushed tortilla chips and shredded cheese if desired


Mmmmm so good.  And for anyone who cares… Ziggy is home… again.  We’re so glad to have him back.  Hopefully everything will be OK this time…

    I’ve actually made this before! It’s so good – the ranch seasoning gives it a little unexpected flavor. YUM!
