Strange… September 15, 2009

Let me just start by saying this meal was a perfectly acceptable, edible, and tasty dinner.  It was easy, cheap, and came together really quickly.  It’s just that…I found a couple things about this recipe kind of strange!  For one thing, the picture clearly shows black beans mixed in with the pasta, but the recipe does not call for them.  Second, I’m not so sure what makes this dish “southwestern.”  The corn??  So, I came to the conclusion that this is basically glorified pasta and spaghetti sauce.  Like I said, it was a nice weeknight meal… just named wrong or something?! 


Southwestern Corn Skillet
*Pillsbury’s Money Saving Meals

8 oz uncooked rotini pasta (2 2/3 cups) (I probably used less than this)
1 lb lean ground beef (I used approx. 1/2 lb lean ground turkey)
1/2 cup chopped onion
1 jar (26 oz) chunky tomato pasta sauce
1 can (11 oz) corn
1/2 tsp salt
1 cup shredded cheddar cheese
4 green onions, sliced, if desired (I omitted)

– Cook and drain the pasta
– Meanwhile, cook the beef and onion in large skillet; drain grease if there is any
– Stir in the pasta, corn, salt, and sauce and cook until heated through
– Top with cheese, let stand a few minutes until melted
– Top with green onions
