Double duty and a let-down… September 14, 2009

We’ll get the let-down part out of the way first.  If you read my last post, you know my poor kitten made it home from the declawing.  Well shortly after I posted that, the complications began.  I’ll try to make this short since it’s probably not very appetizing in a food blog.  He had a lot of bleeding and an overall slow recovery in our opinion.  Today is day 4 post-procedure, and he just wasn’t right.  We took him back to the vet and it turns out he had an allergic reaction to the surgical glue in his paws 😦  They are keeping him another TWO nights to get the glue out and make him better.  It makes me really sad for a number of reasons.  If anyone reading this is considering declawing a cat… please just think twice!  *SIGH*  Ok, cat vent over. 

 

Now for the double duty.  Last night I made a nice (but recipe-less) meal consisting of an ever-so-convenient rotisserie chicken, garlic mashed potatoes (using leftover roasted garlic), and sauteed sugar snap peas.  Simple and oh-so-good!

Tonight I used the leftover chicken for chicken salad.  I added chopped carrots, banana peppers, onions and pineapple along with Miracle Whip Light, black pepper, and a few shakes of Worchestershire.  I served it on a whole wheat sandwich thin.  Mmmmm the sweet, salty, crunchy combination in the chicken salad was awesome.

    yummm I never would have thought to put pineapple in chicken salad! Sounds good : )

    Poor Ziggy… hopefully he has a quick recovery once he’s back home!
