Easy peasy… September 8, 2009

Coming up with dinner ideas is getting more and more difficult.  This week, I don’t seem to have the energy to come up with anything that’s even close to difficult or time-consuming.  Plus, the grocery bills have been a tad bit ridiculous lately.  This week, I tried to focus on using what I have around the house, and I had a lot of homemade salsa sitting in the fridge.  Much more than you’d need for tacos or something.  This “recipe” seemed like a good idea, and it could not have been easier. 

Salsa Chicken with Rice
My own creation, although I’m sure it’s been done before! 

You will need:
Chicken tenders or breasts, skinless/boneless
Shredded cheddar cheese
Instant brown rice

What to do:
– Place frozen chicken tenders in baking dish
– Spoon salsa over each chicken tender
– Bake at 400 until cooked… maybe 20 minutes or so if using frozen tenders like I did
– Sprinkle cheese on top during last few minutes of baking
– Serve over rice

The verdict:  Just what I wanted… easy, quick, and tasty!
