I can safely say that balsamic vinegar has been an acquired taste for me. After a few really bad balsamic vinagrettes, I was sure I didn’t like it. But with all this blog and recipe searching, I’ve seen so many recipes that use it. I decided I needed to give this ingredient a second chance. I bought my first bottle not long ago, and the rest is history!
I subbed beef broth for the chicken stock because I had some that needed to be used. Otherwise, I pretty much followed the recipe exactly. I served this with green beans and salmon that I seasoned with salt, pepper, and dill, and brushed with BBQ sauce.
The verdict: Another simple side dish that I’m sure I’ll be making again. And I totally put extra balsamic on mine 🙂
