Good and bad… September 2, 2009

The good:  Wayne’s blood levels are finally therapeutic after a week and 14 Lovenox injections in the gut.  Hopefully his levels stay in the target range now.  (He’ll still need to take the Coumadin for at least 6 months though :-()

The bad:  We got home after this nugget of good news, and in the mailbox was a summons for me to do jury duty!!  Aaaahhhh.  The streak of bad luck is never-ending lately…

Onto more important things… dinner.  This recipe came from my lovely co-worker Erin.  I served it with turkey kielbasa and a baked potato.

Erin’s Roasted Carrots
You will need:
Carrots (I used 4 large carrots), peeled and cut diagonally
Oil (I used canola)
Chili powder
Salt and pepper
Cilatro, minced
Lime juice

– Preheat oven to 450
– Toss carrots in bowl with oil, cumin, chili powder, salt and pepper
– Spread onto baking sheet in single layer
– Roast in oven for about 30 minutes
– Sprinkle with cilantro and lime juice immediately and serve


The verdict:  So simple and SO good!  Roasting really brings out an entirely different flavor, mmmm. 

Ok, so more randomness… I left this entry half done for awhile because the cute little high-school girl who bought Wayne’s car came to pick it up.  Wayne’s had the car since 2001.  It was really sad to see her go!  Like I got a little teary!  Aww.  The girl was excited though, she said she already “named” the car 🙂
