So after the fat and cheesy baked ziti, I figured why not have cookies too?  I only made these because I had all the ingredients already (well, except the coconut, but that wasn’t gonna stop me!).

Rice Krispies Cookies
The Kellogg’s Cookbook

Ingredients:
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup butter or margarine, softened
1/2 cup white sugar
1/2 cup brown sugar, firmly packed
1 large egg
1/2 tsp vanilla
1 cup Rice Krispies
1 cup quick-cooking oats
1/2 cup shredded coconut

1. Preheat oven to 350
2. Coat 2 large cookie sheets with cooking spray, set aside
3. Combine flour, baking soda, baking powder, and salt; set aside
4. Place butter in large mixing bowl, beat with mixer until light and fluffy
5. Add the sugars and beat until blended
6. Add the egg and vanilla, beat until incorporated
7. Stir in the reserved flour mixture until well combined
8. Stir in the oats, cereal, and coconut
9. Drop by level tablespoons onto cooking sheets, leaving space (these babies spread out like crazy!)
10. Bake for about 12 minutes or until the cookies are lightly browned
11. Transfer to wire rack to cool

    Holy crap…you actually BAKED something?! I’m shocked, to say the least.

    I’ve made these before, but used Fruity Pebbles ( are they Kellog’s?). Ridiculously good!
