I came across this recipe while I was looking for a way to use up the cornmeal from the dreaded polenta recipe.  I love these kind of recipes because I usually have most or all of the ingredients laying around already.


Bean and Cornmeal Pie
– This is my version of a recipe I found here.

2 cans black beans, rinsed and drained
1 large onion, chopped
1 large tomato, chopped
1/3 cup salsa (approx)
1 cup corn
1 tsp cumin
shredded cheddar cheese
sour cream, salsa and cilantro

3/4 cup flour
3/4 cup cornmeal
3/4 cup milk
1 egg white
1/2 cup corn
2 tsp baking powder
2 tsp sugar
dash of salt and chili powder

– Sautee onions in a little oil until soft; add tomatoes, beans, salsa, corn, seasonings
– Combine the topping ingredients in a bowl while the bean mixture is simmering
– Put bean mixture in greased baking dish and spread cornmeal mixture over the top
– Bake at 375 about 15-20 minutes or until cornbread cooked, top with cheese during last couple minutes
– Serve with sour cream, salsa and cilantro


The Verdict:  Easy, Cheap, Tasty. 
Wayne:  “It was OK, but it seems like it should be a side dish to some MEAT.”  Typical 🙂
