To be honest, I wasn’t too excited about tonight’s dinner.  Every week, there seems to be a day with that same old boring variation of “meat-starch-veggie.”  Tonight was supposed to be that night.  I was planning on buying salmon, but it was too expensive, so I decided to try the neighboring $2.99 package of frozen pollock fillets instead.  I googled some recipes and came across this one.  I served it with a boxed fettucini alfredo mix (ssshh!) and some green beans doctored up with pepper and parmesan. 


Pollock Fillets Almondine

2 lb pollock fillets
1/4 cup flour
1 tsp seasoned salt
1 tsp paprika
1/4 cup butter
1/2 cup sliced almonds
2 Tbsp lemon juice
5 drops hot sauce
1 Tbsp chopped parsley
I took the measurements quite loosely… meaning I didn’t really measure anything…

– Combine the flour, salt, and paprika
– Roll fish in mixture and place in single layer in greased baking pan
– Drizzle 2 Tbsp melted butter over fish
– Broil 10-15 minutes or until fish flakes easily with fork
– Meanwhile, saute almonds in remaining butter until golden brown
– Remove from heat and add lemon juice, hot sauce, and parsley
– Pour over fish and serve immediately




The Verdict:  Again, I was not expecting much from this meal, but it turned out to be surprisingly really really tasty.  The fish got all crispy and yummy, and the sauce was the perfect buttery, lemony compliment.  Mmmmm, this one will definitely be filed away for another day!
