Another one for the books. August 17, 2009

I’m really not that big a fan of Rachael Ray… but it just so happens I made another one her recipes tonight.  I was in the mood for a burger, and Wayne loves anything hot, so this recipe looked like it was worth a try.

Salsa Verde Turkey Burgers
–  I saw this on Sing For Your Supper’s blog who got it from RR’s magazine

1 avocado, halved and pitted
1/2 cup mayonnaise
1 clove garlic, finely minced
1 lb ground turkey
1/2 cup salsa verde
4 slices pepper jack cheese
cilantro, chopped coursely
tomato, sliced
Kaiser rolls or buns

  • Combine first 4 ingredients in small bowl, mash w/fork until combined but still chunky
  • Combine meat and salsa in medium bowl, divide to form 4 equal patties
  • Cook in large non-stick skillet, about 4 minutes per side, top with cheese
  • Build your burger!  (Don’t put the mayo and tomato on the same side, like I did, it’ll slide all over)  IMG_0187

The Verdict:  Kind of messy to eat, and to quote Rachael at the end of most of her burger shows: “Look, it’s as big as my head!”  It was.  Regardless, it was tasty.  The salsa made the burgers really moist, and of course anything with cilantro is good in my book 🙂

Had the MMOW (Manda’s Meals On Wheels) cashew chicken for tonights meal. I must say, it was very yummy. The burger looked good, did the crip enjoy it?
