We eat salmon pretty frequently around here.  Wayne, however, suggested we have something different this week.  This recipe is meant for salmon steaks, but I used cod instead.

Hoisin Glazed Cod
2 Tbsp hoisin sauce
1 Tbsp orange juice
2 tsp honey
4 salmon steaks (or cod)
salt and pepper

–  Rinse fish, pat dry, season with salt and pepper, and place on baking sheet lined w/foil
–  Whisk remaining ingredients together in small bowl, brush liberally on fish
–  Broil in oven until done (recipe says 10-13 minutes for the salmon)


The verdict:  Eh.  The flavor was good, but nothing spectacular.  I think the glaze is definitely meant for salmon and overpowered the cod a little.  Wayne liked it a lot though.  Go figure. 


So last night, I made a big batch of pancakes because I had blueberries to use up.  They freeze really well and come in handy when I’m in a hurry in the morning and need to throw a quick breakfast together for the cripple 🙂
